Ingredients:
- 2 ounces of rice vermicelli
- 20 rice wrappers (8.5 inch diameter)
- 1 pound lean ground pork
- 1 minced garlic clove
- 4 tablespoons of fish sauce
- 4 large eggs, beaten
- 1 large minced onion
- 2 ounces mushrooms, drained and chopped
- 8 (4 ounce) large cooked, peeled and deveined shrimp cut into halves
- 2 tablespoons of oil
- 2 pinches of black pepper
- 1 shredded carrot
- 2 ounces of crabmeat
- 3 ounces of bean sprouts
- 1 tablespoon of soy sauce
Directions:
Take the vermicelli and place it in warm water for 40 minutes, let it soak and then drain.
Next, mix the drained vermicelli, beaten eggs, minced onion, chopped mushrooms, sliced shrimp, pork, oil, carrot, crabmeat, bean sprouts, pepper, soy sauce, fish sauce and garlic in a large bowl.
Then take the rice wrappers and moisten each one with a damp tea towel. Fill each rice paper with 3 tablespoons of the mixture. Roll the papers and let them to set for 45 minutes.
Fry the Spring Rolls in a large pan with vegetable oil.
