A delectable Argentinian Stew In A Pumpkin Shell Recipe.

Ingredients:
2 lb beef stew meat
3 tablespoon of oil
2 cups of beef broth
1 onion
2 garlic cloves
2 tomatoes
1 green bell pepper
3 white potatoes,
3 sweet potatoes
1 pumpkin
Butter
1/4 cup of dry sherry
1 cup of dried apricots
1 can whole kernel corn (1 lb),
1 teaspoon of sugar
Salt
Pepper
Directions:
1. Brown meat in a heated pan with oil, garlic and onions until browned. Then, add the chopped tomatoes, green pepper, 1 tablespoon of salt, 1/2 teaspoon of pepper, sugar, apricots, white potatoes, sweet potatoes and broth. Allow to boil and then simmer for 1 hour. Meanwhile, cut top off pumpkin and discard. Stir the sherry and corn into the stew.
2. Clean out the pumpkin completely and brush the inside with butter. Add a dash of salt and pepper. Pour the stew into the pumpkin shell. Then, put the shell in a pan. Bake in a 325F oven for 1 hour, making sure pumpkin has softened.
