Enjoy this Spanish Basque Salt Cod recipe
1/4 cup of olive oil
2 large mild red onions
2 pounds of salt cod
1/2 cup of white wine
1/2 cup of chopped parsley
2 cloves of minced garlic
1 can of tomato sauce
4 ounces of sliced pimentos
1. Wash and soak the cod in water for at least 8 hours.
2. After soaking the cod, slice it into 3-inch pieces. Then, place the pieces in cold water, cover and bring to a boil. After draining the cod, finely chop the garlic and onions. Fry them with the sliced pimentos, in olive oil.
3. Next, stir in the parsley, tomato sauce, and wine.
4. Simmer sauce covered over very low heat for 25 minutes. Then, put the cod in the sauce and simmer for an additional 45 minutes.
