Brazilian Empanadas Recipe

The national appetizer of Brazil, Empanadas are small pies filled with chicken, peas and olives. This traditional Brazilian Empanadas Recipe is absolutely delicious and a wonderful additional to your next party menu.




Dough: 4 cups of flour
2 whole eggs
1 cup of shortening
1 tablespoon of butter
1 egg yolk
2 teaspoon of salt
1 1/2 cup of cold water
3 chicken legs
2 tablespoons of tomato paste
3 tablespoons of flour
1 tablespoons of Oil
1 minced onion
1 chopped clove of garlic
1 bay leaf
1/4 cup of cooked peas
8 minced pitted green olives
1 beaten egg
salt and pepper to taste
cayenne pepper to taste

1. Dough: Pour the four into a bowl first and then add the butter, shortening, eggs, salt, and 1 cup of water. Mix well to make a paste-like consistency. Put the dough to the side for at least 30 minutes.

2. Filling: Saute the onion and garlic in a heated pan with oil until tender. Mix in the chicken, bay leaf, tomato paste, salt, and pepper, and add water just covering the ingredients. Allow to boil, reduce heat, and simmer for 30 minutes, making sure the chicken is completely cooked through. Remove the chicken. Strain and save the broth. Once the chicken is warm to touch, remove the skin and meat from the bone. Then, shred the meat. Stir in the flour mixture, peas, and olives. Add 4 tablespoons of broth. Sprinkle cayenne to taste.

3. Nip off pieces of dough and use them to line the tartlet molds. Scoop a spoonful of filling onto each crust. Roll out the remaining dough and cut out tops for the empanadas. Seal the tartlets by pinching together the top and bottom crust.

6. Brush the tops with the beaten egg. Bake in a 350F degree oven until golden brown, approximately 30 minutes. Remove from the tartlet molds and serve.
