This English Crumpet recipe is sweet and simple.

Eight Servings
Ingredients:
2 teaspoons of salt
1/2 teaspoon of sugar or honey
2 teaspoons of dry yeast
1 pinch of bicarb of soda
4 ounces of bread white flour
3/8 cup of milk
Directions:
1. Pour salt and sift the flour into a bowl. Warm milk and sprinkle on the dry yeast. Leave yeast mixture standing for 15 minutes. Add the yeast mixture to the flour and beat to a batter. Then, place damp cloth over a mixture for 45 minutes
2. Bicarb should be dissolved in 14 milileters of water. Then, whisk the dissolved bicarb into the batter. Cover and let stand for 15 minutes. Place a pastry cutter into a greased hot pan. Pour 1 tablespoon of batter to coat the base with a thin layer. Cook one side until browned (bubbles should burst) and then cook the other side by removing from ring and turning over. Cook for a few minutes only. Let cool.
