Perfect spring and summer dessert for your guests
1 lemon rind
6 ounces of flour
6 ounces of butter
6 ounces of fine sugar
2 tablespoons of fresh lemon juice
1. Grease an 10"x12" baking dish. Blend the sugar and butter in a bowl until soft. Beat the
eggs in a bowl and then mix in the sugar and butter mixture. Blend in the finely grated lemon rind and flour.
2. Pour in the entire mixture spreading it evenly in the baking dish. Place in 350 degree oven for 45 minutes.
Mix the lemon juice and fine sugar together for the topping. Pour on top of the sponge cake while still hot and fresh out of the oven.
