- Ice - 1. To chill a glass or serving dish so that a coat of frost forms on its surface. 2. Frozen water; water freezes at 32*F (0*C).
- Ice Bath - a mixture of ice and water used to chill a food or beverage rapidly.
- Ice Cream Soda - A beverage made of carbonated water, a flavored syrup, and scoops of ice cream.
- Ice Milk - A sorbet to which a small amount of milk has been added. It is lighter and icier than ice cream.
- Icing - a sweet covering or filling such as buttercream or ganache;
- Icing Sugar - Granulated sugar that has been milled to produce a very fine powder.
- Indian Pudding - a spicy cornmeal and molasses staple of early American colonists, the pudding varied with each day and according to the condiments available in the cook’s larder.
- Infuse - To extract flavours from herbs, spices, tea or coffee using boiling water and allowing to stand or cool.
- Infusion - Liquid derived from steeping herbs, spices, etc..
- Instant Rice - fully cooked and flash-frozen rice; when rehydrated, it can lack flavor and be gritty
- Iodized Salt - table salt (sodium chloride) containing potassium iodide, a source of the essential nutrient iodine.
- Irish Coffee - Black coffee with sugar and Irish whiskey, topped with fresh cream.
- Irish Soda Bread - Bread that is leavened with baking soda. Currants are often added.
- Irish Stew - a traditional mutton dish made by boiling well-salted and prepared chops with an equal quantity of onions and potatoes.
- Italian Parsley - Also known as flat-leaf parsley, this plant has a stronger aroma and flavor than the curly-leafed variety.
