- Udon noodles - These Japanese wheat-flour soup noodles can be purchased either fresh or dried.
- Ugli Fruit - A hybrid of grapefruit, orange and tangerine.
- Umami - The fifth primary element of taste, accompanying yet independent of sweet, sour, salty, and bitter.
- Unleavened Bread - Bread without leavening or yeast.
- Unmold - to remove food from its container, usually a decorative mold.
- Unmould - To remove a cake, jelly, dessert or savoury dish from a cooking container or mould, whilst retaining its shape.
- Unsaturated fat - A kind of fat that is in liquid form at room temperature.
- Unsweetened chocolate - (also called baking chocolate): You don't eat unsweetened chocolate. It has no added sugar and is generally composed of 55% cocoa butter and 45% chocolate mass from the bean.
- Upside-Down Cake - a cake with fruit placed on the bottom of the pan, topped by batter. After baking, the cake is turned upside down and served with the fruit on top.
