Try this tasty traditional Croatian roasted pepper and eggplant condiment.
6 red sweet peppers
1 finely chopped garlic clove
1 juiced lemon
½ cup of olive oil
1. At 350 degrees, bake the peppers and eggplants at until tender.
2.Peel skin from vegetables and mince while hot. Season to taste with salt and pepper and stir in the garlic and lemon juice.
3. Stir in the oil and let the vegetables absorb. Place into a serving dish and sprinkle with parsley.
