This is a delicious Southern Jelly Roll Recipe

Ingredients:
1 jar of jelly
1 cup sugar
Juice of 1 lemon
1 cup cake flour
4 eggs
1 teaspoon baking powder
1/4 teaspoon salt
Directions:
Grease a baking pan and line bottom of with wax paper. Add baking powder, eggs, and salt into mixer bowl.
Beat ingredients for a couple of minutes light in color.
Add sugar and beat well for approximately 2 minutes until thickened and light in color. Reduce mixer to low speed and add lemon juice, then flour, mixing until moist.
Pour mixture into pan and bake for 15 minutes.
After baking, turn the cake out of the pan and onto clean tea towel coated with confectioners sugar.
Next, pull the wax paper from cake bottom and trim all of the crispier edges.
Roll the cake, towel, sugar. Leave the cake rolled up and let cool on a rack for approximately 10 minutes. Then, unroll and spread jelly on cake.
Finally, re-roll the cake with the jelly inside and wrap it back in the towel. Sprinkle confectioners sugar.
