Sauerbraten Recipe

This is a delicious recipe for authentic German Sauerbraten




3 pounds of beef
1/4 liters of vinegar
2 onions
1 bay leaf
1 carrot
black pepperbr> 3/4 liters of water
3 cloves
1/4 liter of vinegar
5 juniper berries
1 teaspoons of salt
1/4 liter of broth
1/2 teaspoons pepper
1/2 cups sour cream
2 tablespoons flour
1.4 ounces of bacon
3.5 ounces of soaked raisins
2 tablespoons of oil
1 tablespoons of red current jelly
2 chopped onions


1. Add all of the marinade ingredients to a sauce pan and bring to a boil. Once boiled, pour the marinade over the meat and cover well. Keep in the refrigerator for at least 5 days. Put the marinated meat on a on a strainer and drain well.

2. Next, fry the bacon in oil for and place with the meat and fry it on both sides. Then, sauté the onions adding the peppers and salt. Add the marinade which has been sifted through the strainer.

3. Simmer for 1.5 hours, add marinade every so often. Then, add the soaked raisins and red current jelly. Simmer for another hour. Next, take the meat out of pot and let it cool 10 minutes on a platter.

4. For the sauce, stir the flour into the sour cream and pour into the meat sauce, continually stirring. Simmer for 10 minutes. Cut the meat into then pieces and place into the sauce. Serves 8 people.
