Servings:

4

Ingredients:

3/4 cups of sugar
2 teaspoons of salt
1 cup of flour
1/2 cup of butter
10 cups of flour
1 1/2 cups of lukewarm milk
3 1/2 yeast envelopes
3/4 cups lukewarm water
3 cups of flour
1/2 cups of eggs
5 cups of currants
1 1/2 cups of slivered almonds
1 cup of minced citron
1/2 finely grated lemon rind
2 teaspoons of rum

Directions:

    1. Dissolve the yeast in the lukewarm water and add 1/4 cup of lukewarm milk and add 3 cups of sifted flour. Cover the sponge-like mixture with a cloth until you see bubbles on the exterior. Pour the rest of the milk on the sponge-like formation. Add the egg yolks, sugar and salt and mix well. Add 1 cup of flour, mix well and then stir in the butter. Slowly add 10 cups of flour. Mix in the currents, almonds, and citron, along with the lemon rind and rum.

    2. Knead the dough until the fruits and nuts are mixed in well and dough is smooth. Add a light dusting of flour and allow it to rise in a warm place for 40 minutes. Push it down and then let stand for an additional 20 minutes. Split the dough into two pieces and knead each piece. Let them stand for an additional 10 minutes. Place one ball of dough on a floured surface and roll it out with a rolling pin. The ends should remain somewhat thicker. Put this on a baking sheet and brush the center with melted butter. Fold one of the thicker sides toward the other. The shape should look like a vanishing moon.

    3. Repeat the same process with the second piece of dough. Let the Stollen rise, covered in a warm place until they double in size, approximately 1 1/2 hours. Bake in a 375F degrees for 40 minutes. Brush with butter and cover with vanilla sugar.
