Traditional Irish Stew Recipe

Ingredients:


3 pounds of peeled and cut boiled potatoes
1 minced onion
1 pound of carrots
6 stalks of chopped celery
6 tablespoons of all-purpose flour
1/4 cup of vegetable oil
3 pounds of boneless lamb shoulder
1 1/2 tablespoons of minced parsley
1 teaspoon of dried thyme
6 cups of chicken broth

Directions:


Simmer the lamb, parsley, thyme, and salt and pepper to taste in 4 cups of broth in a large covered pot for 1 1/2 hours. Next, add in the potatoes, onion, carrots, celery, and rest of the broth. Simmer covered for an additional hour. Separately, mix together the flour and oil until smooth and stir into the simmering stew until well blended. Continue to simmer the stew uncovered until it thickens, approximately 5 minutes. Finally, season with salt and pepper to taste.
