Ingredients:
7 pound of duck
5 cups of hot water
3 tablespoons of maltose
1 tablespoons of vinegar
1 tablespoons of sherry
1 tablespoons of sesame oil
1 tablespoons of sugar
1 tablespoons of soy sauce
5 tablespoons of hoisin sauce
12 steamed chinese pancakes
1/4 pound of scallions
2 cucumbers
Directions:
Pump air into the neck of the duck separating the skin from the meat and clean the entire duck well. Boil water in a pot and pour over the duck several times. Next, allow the duck to duck and remove the innards by slicing open the stomach and pulling everything out.
Rub a marinade of vinegar, maltose and hot water on the duck.
Take the duck and hang it by its neck in a room temperature location for at least 13 hours. Then, cook the duck in a 450F degree oven for 40 minutes making sure the skin is crispy and meat cooked well and tender.
To serve, carve the duck by placing the breast side up and slice downwards to the head. Throw out the meat without skin.
