Ingredients:


1 pound of Huitlacoche
1 epazote (Mexican wormseeds) sprig
2 chiles poblanos
1 chopped garlic clove
1/4 of a minced onion
3 tablespoons of peanut oil
1/4 teaspoon of salt

Directions:


Roast, peel, and devein the chiles poblanos, then cut them into strips. Take the corn cobs and remove the fungus, chopping it aggressively. Next, saute the onion and garlic in oil just until they are tender. Add the chiles poblanos strips, huitlacoche, epazote, and salt and cook over a medium flame for 15 minutes, making sure the mixture is tender.
